Clairette de Die - Divine Tradition

Fruity, floral and juicy. This lightly sweet sparkling wine is a refreshing fruit basket on the palate. Serve cold as an aperitive or with desserts such as a pear tart.

Description

Blended with 75% Muscat Blanc - 25% Clairette, this light and elegant sparkling wine shows rich fruit aromas such as pears and apricots with the presence of honeysuckle notes. Best served chilled, the relatively low alcohol and slight sweetness makes this wine a great aperitive and is best consumed immediately.

Indigenous yeast starts fermentation of this aromatic must and is transferred to the bottle before fermented dry, resulting in a build-up of bubbles along with some residual sugar. After four months, the wine is disgorged and released without the addition of liqueur d'expédition.

Since joining the family business in 2004, Emmanuel Poulet has continued the legacy that his ancestors have built. With 23 hectares to manage, Emmanuel currently produces 6 different wines of which 4 are sparkling. He values the winemaking processes and working culture that his father passed on to him, focusing on the grape varieties of the Chatillon-en-Diois appellation (Chardonnay, Aligoté, Gamay).

With great respect to the terroir of his vineyards, the domaine has obtained the Haute Valeur Environnementale certification in 2012. This certification is award to those who consistently and appropriately engage in preserving and improving biodiversity in their vineyards. Emmanuel prides himself in being a vigneron independant and continues to push himself to produce wines to the utmost quality.
