Dry, light golden with fine bubbles. This sparkling wine is made just like Champagne, perfect for celebratory toasts, aperitive and to pair with dishes. Toasted nuts, white flowers and honey aromas and flavours gives an elegant and balanced impression.

Description

Elegant and structured, this dry sparkling wine is versatile and can be drunk in any and every occasion. Pleasant aromas of toasted almonds, white flowers, brioche and honey are mirrored on the palate, showing complexity and persists with a long finish. Serve it cold as an aperitive or with main dishes such as roasted chicken or grilled salmon. This wine even goes well with some buttered popcorn for movie nights!

Made with 85% Clairette - 10% Aligoté - 5% Muscat by the traditional method (same as Champagne), the time-consuming process undoubtedly reflects the complexity being poured in the glass. This sparkling wine is aged on its lees for 36 months before disgorgement. Drink immediately or lay it down for 3-5 years for added complexity.

Since joining the family business in 2004, Emmanuel Poulet has continued the legacy that his ancestors have built. With 23 hectares to manage, Emmanuel currently produces 6 different wines of which 4 are sparkling. He values the winemaking processes and working culture that his father passed on to him, focusing on the grape varieties of the Chatillon-en-Diois appellation (Chardonnay, Aligoté, Gamay).

With great respect to the terroir of his vineyards, the domaine has obtained the Haute Valeur Environnementale certification in 2012. This certification is award to those who consistently and appropriately engage in preserving and improving biodiversity in their vineyards. Emmanuel prides himself in being a vigneron independant and continues to push himself to produce wines to the utmost quality.
